To be honest, this is not my go-to cookie to make for the holidays. I used to find them lacking, and a bit boring.

We added our Maximum Pie spice to these buttery, crunchy cookies and the results turned into something I plan on recreating all month.
Not only were they addicting, but they were very inclusive when baking with small children. The ingredients are simple and the cookie cutters are so much fun for them to use!
We had a little dough left over after our trays were full, so I just let him play with the dough like play dough while I sat back and sipped some tea; feeling like an A1 parent! lol
In the bowl of a stand mixer, or you can use hand held beaters, cream the butter on medium speed until light. Gradually add the sugar and beat for another 2 minutes.
Add the Maximum pie Spice and salt, beat to combine.
Mix in the flour until well incorporated. It should resemble a dough and pull apart from the side of the bowl when mixing. Add a little flour if need be.
On a lightly floured surface, knead the cookie dough until smooth.
Roll out the dough, using flour on top or bottom when needed, until about 1/4 inch thick.
Use your cookie cutters of choice to make your shapes. The dough should still be a bit soft so handle carefully when placing them on the prepared cookie sheets.
Ball up the excess dough and roll out again!
Bake for 10-15 minutes; until they are just very lightly brown. Cool completely on pan.
