Creamy Sunshine Gnocchi and Chicken

This Chicken and Gnocchi dish combines tender chicken thighs, tossed in the vibrant Big Cove Foods Sunshine Blend, with pillowy potato gnocchi and a velvety, creamy sauce.
Ingredients

6 chicken thighs, boneless, cut into bite size pieces

1 tbsp Big Cove Foods Sunshine Blend
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, roughly minced
- 1.5 lb potato gnocchi (about 4 cups)
- 2-3 big handfuls of fresh spinach
- 1.5 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup Parmesan
- Salt to taste
Directions
In a medium bowl, toss the chicken with the Sunshine Blend and mix until well coated.
- Set a large pan over medium-high heat; add the olive oil and heat until shimmering. Add the chicken and cook until starting to get nice and brown and cooked through (internal temp 165 F). Remove the chicken from the pan.
- Meanwhile, in a pot of boiling water, cook the gnocchi according to package instructions. Drain and set aside.
- Without wiping out the pan, add the onion and cook, stirring, for 2-3 minutes, then add the garlic for another 30 seconds, or until deliciously aromatic!
- Add the broth to the skillet and cook until liquid is reduced but about half the amount. Then add the spinach and allow to wilt.
- Add the heavy cream and cook until starts to simmer. Add the chicken back to the pan and mix into the sauce.
- Gently add in the gnocchi until everything is coated, sprinkle on the parm and serve!
- Salt to taste!
Recipe Note
Cook your gnocchi according to instructions, some are pan fry, while other are boil.

I purchased the Taco Enhancer product and first tried it when making some ground beef for my tacos. I tried the meat just using the taco spice and it did well just being on its own. It provided a reasonable amount of heat to the meat that wasn't overpowering but was noticeable. As I ate more of the meat with the spice I felt the heat of the product increase which was nice. If you don't like hot stuff, this is a good product to get you started to feel a little heat that is reasonable. If you like hot stuff, this probably won't do it for you but it does provide a small kick. It paired well with the ground beef as the meat really soaked up the spice.
We used this spice on a salad as it said it contained mango. While we typically start away from anything Porcine, this one is a must but. The museum and garlic mixed with the mango gives it a unique flavour that we didn't even realize we were missing from our cupboard until we tried it!
