Grilled Portobello Arugula Salad

Ingredients

  • 2 portobello mushrooms; stemmed and de-gilled

  • ½ cup olive oil

  • 2 tablespoons Mary Had a Lot of Lamb spice blend
  • 3 tbsp balsamic
  • ⅓ cup panko

  • ⅓ cup pecorino (or Parmesan cheese)

  • Pinch salt and pepper
  • 1 tbsp olive oil
  • 2 big handfuls of augula, micro greens or even romaine may be able to take the heat

Directions

  1. Preheat your BBQ to medium heat.

  2. Mix the dressing: in a small bowl combine the Mary spice blend, olive oil and balsamic vinegar.
  3. Using about 1/3 of the dressing, coat the mushrooms all over.
  4. Add them to the grill and cook to soften and char a bit; about 5 minutes each side.

  5. In a small bowl; toss the panko, parmesan, salt and pepper. Add the olive oil and combine well. It should just coat the crumbs without being too soggy.

  6. Lay the Arugula on a large salad plate. Slice up the mushroom and lay it over the lettuce while still warm. Add the rest of the dressing (or as much as you'd like) all over and sprinkle generously the panko crumbs all over.
  7. Taste, adjust as needed for personal preference and enjoy.
