Easiest Burrito Night

Bonus: this recipe will make enough filling to feed a family of 4 for 3-4 burrito nights! Freeze in portions for later use.

Wednesday night is burrito night! We aren't ones to meal prep, but I LOVE the consistency of Wednesday night Burrito Night. The fact that this easy prep can last almost all month is just so cool. 

Taco Enhancer is our rising star. It's now becoming super popular in pantries across Canada and we couldn't be more thrilled to see it get such recognition. It's intense, with a medium heat and pure bold taco flavour - we know you'll love it.

The 'assembly' ingredients and instructions are just what we use, but design your own based on your own personal preferences. This is your burrito night, it should be exactly how you want it. The only recommendation I have is to not overfill your burritos as it will get harder to roll up and was bladder out when cooking. It's tempt, we know. But better to make two if you're really hungry! 😄

Easiest Burrito Night

Ingredients

  • 2 lbs medium ground beef

  • 2 tbsp tomato paste
  • 2 tbsp Big Cove Foods Taco Enhancer spice blend

  • 2 tbsp worchestershire sauce
  • 2 red peppers, sliced thin
  • 1 small red onion, sliced thin

  • 1 can black beans, drained not rinsed
  • 1 cup beer or stock

  • tortillas

  • sour cream
  • shredded cheese

  • sliced jalapeno's

  • hot sauce

Directions

  1. In a large pan, start to cook your beef until almost no pink is left. Tip in the peppers, onions, Taco Enhancer spice blend, worcestershire sauce and tomato paste. Cook for about 8-10 minutes longer until everything starts to mingle and soften.

  2. Pour in the beer or broth and black beans. Cook until liquid has reduced and everything starts to thicken. About 10-15 minutes.

  1. Lay out your tortilla’s and spread desired sour cream and cheese. Then top with your other options of jalapeno and hot sauce!

  2. Then add a nice scoop of the filling on top and roll into your burrito by folding over, tucking in the sides and rolling it up — Comment if we need a burrito tutorial! I may make one for you on next burrito night 😉

  3. Enjoy like this!

    … or brown up by using a panini press (like we do), oven or air fryer!

I can confirm the quality of this recipe, as I had the very great fortune of having it prepared for me at Big Cove by Sarah herself!

I guarantee that the use of a panini press definitely amps up not only the crispy crunchityness of the outer tortilla, but also the presentation. You’ll look like you’re a 4 star burrito expert, and the taste will match.
Food always tastes better when it looks this great.

I don’t know what the cost of a panini press is, but I bet once you see the results, it’ll be worth it.

Quick note: If I had written this recipe, or edited it; Ghost Taco isn’t optional, Taco Enhancer is the optional ingredient. Used as a backup for children or people averse to some heat. Trust Dave; it’s very well balanced and not designed to make you sweat just for the fun of a novelty.
