Ingredients
4 carrots, peeled and shredded
2 green onion, sliced thinly on an angle
1 lemon, juiced
1 tsp dijon mustard

1 tbsp Big Cove Foods Egyptian Summer spice blend
1 tsp sugar
1/4 cup olive oil
1 Jalapeno (optional), seeded and julienned
Directions
Add your sliced green onions to a bowl with cold water, just enough to cover, and add an ice cube or two. Allow to sit for at least 20 minutes, then drain well. This allows the green onions to mellow out a bit and taste less abrasive.
In a small bowl mix together the lemon juice, dijon mustard, Egyptian Summer spice blend, sugar and olive oil.
In a medium bowl, toss together the carrots, jalapeno and green onion. Then add in your dressing and mix thoroughly. Allow the flavours to mingle in the fridge for at least an hour.
