Cocoa Loco Bran Muffins

I've honestly never thought about making bran muffins.

But Dave's mom was down visiting, whipped these up and now I'm forever changed. Plus if chocolate's involved, I'm in. 

Our Cocoa Loco blend adds a great nutty, gingery flavour to so many baked goods; these bran muffins included! We added some extra chocolate chips to these healthy muffins ... because we're all about balance :)

We use yogurt instead of eggs in most of our baking because our son is allergic. Plus I think they add moisture which is a great win. So if you don't have yogurt, just use 1 egg.

Cocoa Loco Bran Muffins

Ingredients

  • 1 1/4 cup whole wheat flour

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 4 tbsp Cocoa Loco Sweet Spice

  • 1/4 tsp salt

  • 1 1/2 cups bran buds

  • 1 1/4 cup boiling water

  • 1/2 cup brown sugar

  • 3/4 cups milk

  • 4 tbsp unsalted butter, melted

  • 1/4 cup plain thick yogurt

  • 1 cup chocolate chips

Directions

  1. Preheat the oven to 400F and line a muffin tray with papers, or coat with butter

  2. In a medium bowl, stir together the flour, baking soda, baking powder, cocoa loco and salt.

  3. In a large bowl, stir together the bran buds and boiling water; let sit together until the water had turned the brans to mush, 2-4 minutes.

  4. Stir the sugar, milk, yogurt and butter into the bran mixture until well combined.

  5. Add in the flour mixture and stir until just incorporated, don't over mix. Then add in the chocolate chips

  6. Portion evenly into the muffin tins and bake for 20 minutes, or until the tops spring back when pressed lightly.
