Easy Chicken Alfredo with Porcini

We love this super simple cream sauce to use in our take of a chicken alfredo. Porcini BBQ Genie has long been a favourite of ours to use in pasta, and we aren't holding back here! It rich umami flavour brings out something special in this classic dish.

We broke up the creamy pasta with some nutritious spinach - you can add even more to make it green heavy! it's all about preference.

Easy Chicken Alfredo with Porcini

Ingredients

  • 2 tbsp Porcini BBQ Genie

  • 2 chicken breasts, sliced across into ½ inch pieces, roughly

  • 1/4 cup olive oil

  • 1 cup heavy cream
  • 3 tbsp unsalted butter
  • 1 garlic, grated
  • 2 big handfuls of spinach
  • 1/2 cup pecorino cheese (or parmesan)

  • 375 grams fettuccine pasta

Directions

  1. Boil water in a large pot and cook pasta according to the instructions. Strain and save about a cup of the pasta water.

  2. In a small bowl, toss together the chicken, 1 tbsp Porcini BBG Genie spice and the olive oil.

  3. Heat the oil in a large pan over medium-high heat; add the chicken and spread out to create an even layer if possible. Allow to cook, without moving until starting to brown. Flip and brown the other side. Continue cooking until the chicken is cooked through and nicely browned. Remove from heat and set aside.

  4. Turn the heat down to medium, and add the cream. Heat through, scrapping any bits off the bottom of the pan. Add the grated garlic, last 1 tbsp of Porcini BBQ Genie and butter; stir until emulsified.

  5. Add in the spinach and cook until starting to wilt down, then add the chicken back to the pan and the parmesan. Stir together to incorporate all these delicious ingredients. Add salt to taste, I don’t think we added any, so it’s really all personal preference.

  6. Add the drained pasta to the large pan and using tongs, toss around until combined. Add a splash of the reserved pasta water until the creamy consistency is to your liking. Give it a minute between splashing in the pasta water to allow the water to absorb and do its thing.

  7. Serve with extra parmesan if you have it. Enjoy!
