This sauce is so easy and so amazingly fresh, we made it last night and I'm still salivating over how amazing tomato season is.
This dish was inspired from a recipe in the most delicious cookbook ever, 'Canal House: Cook Something', we've utilized there simple technique for tomato sauce and added a Big Cove Foods spice blend!
Our 'Mary Had a Lot of Lamb' spice blend makes for a wonderful tomato sauce - a no brainer due to it's abundance of aromatic herbs. Just add it in and salt to taste.
That's it. I have nothing else to add to this. It's that simple. Please try it.

Cut the tomatoes in half; remove core and squeeze the seeds and juice out and discard. Roughly chop the tomatoes.
Bring a large pot of water to a boil, adding a few tbsp kosher salt. Cook pasta according to directions, or until al dente. Strain, reserving about a cup of pasta water.
In a large pan, heat the oil over medium heat. Add the 'Mary' spice blend and cook for a couple minutes, or until aromatic.
Tip in the tomatoes and cook just until heated through. Salt to taste.
Add the already cooked and strained noodles to the pan and stir to combine. Add some of the pasta water as needed to get a thicker consistency.
