We think eggs are the best way to conquer hunger with healthy ingredients! Easy and a great way to use up little leftovers laying around the fridge, it's a guilt free meal when you're strap for time.
Eggs last so long in the fridge, that we usually have them laying around waiting to be cracked. I usually just scramble with a spice blend and call it a meal. But I'm always so surprised how quick frittatas are and how much more amazing they taste then a quick scramble.
The versatility of this is unreal; use this as the base for whatever you have lying around so that we can waste less and eat well!
Easy substitutes for cheese are feta or mozzarella, and if you don't have Porcini BBQ Genie then I would also recommend our 'Mary Had a Lot of Lamb', 'Taco Enhancer', 'Espresso Nice' or 'Maple Mustard Hamonizer' blends!

Ingredients
- 8 eggs (local is more awesome!)
- ½ cup milk
-
1½ tbsp Porcini BBQ Genie
-
¼ teaspoon sea salt
- 2 cup grated cheddar cheese
- 2 tablespoon unsalted butter
- 1 shallot, diced
- 2 cups roughly chopped broccoli florets
- 2 cups Spinach, roughly chopped
- 3 green onions, sliced on a diagonal into 1" pieces
Directions
Preheat the oven to 425 °F
In a 10-inch cast iron skillet, heat butter on medium heat. Once melted, add the chopped broccoli, shallot and that pinch of salt. Sauté until tender and maybe even some yummy char marks, stirring frequently. About 5 minutes.
- In a large bowl, whisk together the eggs, milk, and Porcini BBQ Genie spice blend. Then whisk in half of the cheese.
Arrange the vegetables in an even layer across the skillet and pour the egg mixture into the pan, giving it a little shake to distribute the ingredients once again. Sprinkle the frittata with the remaining cheese and then place the green onions nicely on top (extra points by having fun and making look pretty).
- Put the pan in the oven and bake until the middle is just barely set, about 12 to 15 minutes (ours took 13 minutes)
- Remove from oven and let it rest for 5 to 10 minutes before slicing into it. Leftover frittata will keep well in the frige for up to 3 days!

from 176 reviewsWhat I love about these spices is that they may come individually packaged, but I still turn on a bit more wild, by mixing one package with another. Have you tried Taco Enhancer with Red Rub? Amazing

This was amazing, I’ve already made the chickpea salad 4 times!!! I also made it for a few other people to try and they all loved it as well and asked where it was from!
My favourite spice blend. Delicious on any/all meat!
I traveled to Ontario for Christmas (2023) and brought Pouches of Big Cove Pick your Own Five. It was a big hit several years ago when I did it. Great feedback from everyone back then and everyone was very happy to recieve them again. The blends and recipes are great.
Had to order them all so we could try the ones we haven’t yet!
I purchased the Taco Enhancer product and first tried it when making some ground beef for my tacos. I tried the meat just using the taco spice and it did well just being on its own. It provided a reasonable amount of heat to the meat that wasn't overpowering but was noticeable. As I ate more of the meat with the spice I felt the heat of the product increase which was nice. If you don't like hot stuff, this is a good product to get you started to feel a little heat that is reasonable. If you like hot stuff, this probably won't do it for you but it does provide a small kick. It paired well with the ground beef as the meat really soaked up the spice.
We used this spice on a salad as it said it contained mango. While we typically start away from anything Porcine, this one is a must but. The museum and garlic mixed with the mango gives it a unique flavour that we didn't even realize we were missing from our cupboard until we tried it!
