We love a one pot dinner! So easy and quick, you barely have to think about it on those busy days. If you haven’t already noticed, we love our instant pot. Like love love. So here is a recipe we love using the thing we love love.

Mary Had a Lot of Lamb

Insta-Chicken & Rice

Ingredients

  • 1 lb tomatoes, cored and chopped

  • 4 jalapeno, chopped (seeded optional)

  • 1 small white onion, chopped

  • 3 garlic cloves

  • 3 tbsp Mary Had a Lot of Lamb spice blend

  • 1 1/2 cup water 2 lbs bone in chicken thighs, with skin (8-9)

  • olive oil

  • 1.5 cups long grain rice

  • 1 tbsp capers

  • cilantro for serving

Directions

  1. In a food processor, blend the tomatoes, jalapeños, onion, garlic and Mary Had a Lot of Lamb.

  2. Season the chicken with salt and pepper. Using an instant pot, set the saute function to high, add a nice glug of olive oil. When hot, add chicken, skin side down and sear until brown. Set aside on plate until all the chicken has gone through.

  3. In now empty pot, add the tomato mixture, water and capers and bring to simmer. Nestle the chicken snug inside and cover. Cook on high pressure for 10 minutes.

  4. Release the pressure and serve.
