We love one-pot dinners here; so easy and delicious! The Sunshine Blend adds a beautiful flavour, vibrant colour and bit of tang to bring these ingredients together.
We chose a basmati rice as it tends to cook up a but less "mushy" as other rices. But feel free to swap with whatever rice you have on hand. Tip: rinse your rice well! It removes the starches from the grain so you don't get a gummy texture.
Once it's ready, just scoop and serve!
You can add more sausages if you need to feed more mouths - or none to make this a delicious vegetarian meal.
Heat a deep pan, with a tight fitted lid, over medium high heat. Pour in about 1 tbsp olive oil and heat.
Poke the sausages a few times and add them to the pan, allowing them to brown up. Don't worry about cooking them through completely, they will be cooked again afterwards. Set the sausages aside on a plate.
Add a bit more olive oil if the pan looks dry and add the onions. Cook until soften and beginning to brown. Add the garlic and Sunshine Blend; cook for another minute.
Add the peppers and rice and stir to combine.
Pour in the stock and heavy cream. Mix well and return the sausage to the pot and bring everything to a simmer. Lower heat and cover; cook for 20-25 minutes, or until rice is cooked and fluffy.
