Raw Asparagus and Farro Salad

Move over rice - we're on the grain train! One way we try to get some extra nutrients into our meals, is incorporating different grains into mealtime.

Farro is a a high-protein, high-fiber ancient whole grain - rich in nutrients, minerals, and antioxidants. Mix that with vibrant, crisp local asparagus and our Maple Mustard Hamonizer spice blend and you have a really healthy salad bowl ready for battle.

The Maple Mustard Hamonizer adds a sweet and savoury bite here, we added a bit of maple syrup to enhance that component and bring everything together a little closer.

Ingredients

  • 1 lb asparagus, sliced thin on diagonal

  • 1 cup farro (approx. 3 cups total when cooked)

  • 1 tomato, cored and cut in small chunks

  • 1/4 cup olive oil

  • 2 tbsp Maple Mustard Hamonizer

  • 2 tbsp white wine vinegar

  • 1 shallot, diced

  • 1 tbsp maple syrup

  • 1 tsp salt

  • Handful of basil, leaves sliced thinly

  • 1/2 cups Parmesan cheese

Directions

  1. Cook the farro grains according to package instructions. Set aside to cool.

  2. Make your dressing; in a small bow add the shallot, white wine vinegar, Maple Mustard Hamonizer, maple syrup and salt.

  3. In a large bowl, add the asparagus and the dressing and toss together well.

  4. Mix in the farro grains and tomatoes; then the basil and parmesan.

  5. Salt to taste. Add a bit more olive oil if feels a bit dry.
