Rice Pudding with Maximum Pie Spice

Ingredients

  • 1/2 cup short grain rice (Arborio)
  • 2 cups milk or oat milk or almond milk
  • 1 cup water
  • 1 tbs sugar (adjust to your liking)
  • 1/2 cup raisins
  • 1/4 cup toasted walnuts
  • 1 tbs maple syrup for drizzling

Directions

  1. Bring milk, water, and rice to a gentle boil.

  2. Add 2 tbsp of Maximum Pie spice and gently whisk to mix in. Whisk every few minutes to make sure rice doesn’t stick to bottom of pan.

  3. Boil for 20-25 mins until rice is tender.

  4. Remove from heat and mix in raisins and let cool and thicken. The rice should be creamy and still have a little liquid.
  5. Serve in bowl and top with toasted walnuts and drizzle with maple syrup.
