Roasted Vegetable Quinoa Bowl

So much goodness in one bowl, Egyptian Summer brings it home with its exotic flavours and touch of heat.

Roasted vegetables charring on a sheet pan before added to the top of fluffy quinoa then topped with feta and a sweet lemon vinaigrette. Leftovers encouraged as it only gets a little better over the next couple days.

This is a great combination, but you can play around with the vegetables - just keep in mind some of the cook times may change.

Roasted Vegetable Quinoa Bowl

Ingredients

  • 5 market carrots, peeled and cut in half length wise

  • 2 - 398 ml can chickpeas, drained and rinsed
  • 1/2 bunch asparagus, ends trimmed
  • 1/4 cup olive oil

  • 2-3 tbsp Egyptian Summer

  • 1/2 cup pancetta (optional)

  • 2 cups Quinoa, rinsed

  • 1 cup feta, crumbled (have more handy if desired)

  • 1/2 cup lemon juice

  • 1/2 cup olive oil

  • 2 tbsp worchestershire

  • 2 tbsp maple syrup

  • 1/2 tsp salt (or more to taste)

Directions

  1. Preheat oven to 425 F

  2. On a large sheet pan, add the carrots, chickpeas, Egyptian Summer spice blend and olive oil and toss together. Roast for 25 minutes.

  3. In a medium pot, cook the quinoa following the package instructions. Cover to keep warm and set aside.

  4. Pull out the sheet pan after the 25 minutes and add the pancetta and asparagus. Toss and roast for another 25 minutes or until vegetables are starting to char.

  5. Meanwhile, make the vinaigrette. Whisk all the ingredients together in a medium bowl and set aside.

  6. Assemble the quinoa bowls; fill a bowl with quinoa, then roasted veggies, feta and dressing.

  7. Enjoy!
