Rustic Pork + Olive Stew

It’s getting closer to dinner and you have no idea what to do, but you know you want something good. One of our favourite ways to create great flavour with the speed we desire – an Instant Pot dump-n-go.

Cubed pork, vegetables, Big Cove Foods spice blend – 30 minutes in the Instant Pot. A hearty stew that can be accommodated any which way you desire. We chose this combo because… well it’s the middle of a pandemic and it’s what we had in the kitchen.

Ingredients

  • 1 1/2 lbs pork shoulder, 1″ cubes
  • 1 onion, chopped into large chunks
  • 3 garlic cloves, crushed
  • 1 carrot, peeled and sliced thick
  • 1 large potato, cubed
  • 4 oz button mushroom, stems trimmed
  • 1/2 cup green olives, roughly chopped
  • 1/4 red wine vinegar
  • 1 cup stock
  • 2 tbsp Big Cove Foods Mary Had a Lot of Lamb’ spice blend
  • Salt + pepper to taste

You will need an Instant Pot – or you can cook in large dutch oven using these flavours and your own technique!

Now this is where it gets tricky…

Put all of these ingredients into the Instant Pot, seal valve and pressure cook on high for 30 minutes. Allow for 10 minute natural release before manually letting it all go. Season with salt and pepper to taste.

We enjoyed with our favourite starch…rice!
