Mushroom Stuffing

I have no idea why stuffing is just usually a Thanksgiving thing. I think I am going to change that up, stuffing is now in the meal time rotation! It's so good!

We kept this recipe vegetarian; there is just so much flavour in the spice blend that we didn't feel we needed to add yummy ingredients like bacon or sausage. But you can absolutely alter this recipe to include what you'd like!

This mushroom themed stuffing is definitely complimentary to any Thanksgiving dinner. And so good I am going to start making it throughout the year.

Mushroom Stuffing

Ingredients

  • 2 onions, diced

  • 4 celery stalks, diced

  • 1 cup unsalted butter

  • 8 oz mushrooms, chopped

  • 22 slices bread, about 1 loaf, ripped or cut into cubes

  • 1 1/2 tbsp Porcini BBQ Genie spice blend

  • salt to taste

  • 1/2 - 1 cup broth

Directions

  1. Preheat the oven to 350 F

  2. In a large pan melt the butter on medium heat. Add in the onions, celery, mushrooms and Porcini BBQ Genie; cook until softened. 

  3. Add the bread and stir to combine. You want the bread to be soft and moist, but not soggy. Add the broth a little bit at a time only if needed to obtain this consistency.

  4. Pour the stuffing in a 9 x 13 baking dish and cover with foil. Cook for 30 minutes; uncover and turn on your broiler and cook until browned, about 5 minutes. Toss it up and broil again for another 5 minutes, until you see some crunchy bits on top. 

  5. Serve.
