Sunshine Salad in a Jar

We can't get enough of this salad in a jar with Sunshine Blend!

The dressing is the anchor; while you get to be creative and experiment with whatever vegetables, ingredients, meats you have on hand.

We used Farro, tomatoes, cucumber, cured chorizo and mint. But why not try canned artichokes or celery! Anything that won't soggy down too much sitting in dressing. 

Because the whole point of salad in a jar, is to make ahead and pack for the day!

Sunshine Salad in a Jar

Ingredients

  • 2 small field cucumbers, diced small

  • 3 medium tomatoes, diced
  • 2 cups cooked farro

  • 1/2 cup diced cured chorizo

  • mint
  • 1/2 cup finely grated parmesan cheese

  • 1-2 tbsp Sunshine Blend (start with 1 and add an extra scoop if you feel it needs more sunshine kick!)

  • ¼ cup olive oil

  • 1 lemon, juiced

  • salt to taste

Directions

  1. In a small jar, add the Sunshine Blend, olive oil, lemon, parmesan cheese and salt to taste.

  2. Shake it well. Taste and adjust to your own personal preference.

  3. In a mason jar, start with your grains at the bottom and pile in the rest of your salad ingredients.

  4. Pour a couple tbsp of your sauce on top, screw the lid on and shake it up!

    Taste, add more dressing if desired.

  5. This makes a lot, so you can make up 1 or 2 jars and toss the remaining ingredient together in a bowl and save in the fridge for later.
