Zucchini Pizza Bake

Attention all Keto, low carb enthusiasts!! This one is definitely for you.

This time of year, everyone is giving away their zucchini's - just try to leave a gardeners house without a trunk full.

We utilized our 'Mary Had a Lot of Lamb' blend to bring all these delicious ingredients together in a pretty easy, pretty simple, one-pot dish.

We enjoyed this for days later!

Zucchini Pizza Bake

Ingredients

  • 1 lb zucchini

  • Kosher salt

  • 2 bell peppers, preferably mixed variety, cut into large pieces

  • 1 cup Pepperoni slices

  • 398 ml mutti pizza sauce (homemade is awesome too)

  • 1/4 cup 'Mary Had a Lot of Lamb' spice blend

  • 2 cups shredded mozzarella cheese

Directions

  1. Preheat the oven to 400 F.

  2. Slice the zucchini in half lengthwise and sprinkle generously with kosher salt. Allow it to sit for 20-30 minutes. With paper towel, blot dry and wipe off any excess salt. Cut into large, bite size pieces.

  3. In a 9 x 13 baking dish; toss together the zucchini, peppers, pepperoni slices, pizza sauce and the 'Mary' spice blend. Cover with foil and cook for 30-40 minutes or until vegetables are tender.

  4. Remove foil and sprinkle the cheese all over! Return to oven and bake until cheese has completely melted.

  5. Remove from oven and allow it to cool for 5 minutes.
