Slice the zucchini in half lengthwise and sprinkle generously with kosher salt. Allow it to sit for 20-30 minutes. With paper towel, blot dry and wipe off any excess salt. Cut into large, bite size pieces.
In a 9 x 13 baking dish; toss together the zucchini, peppers, pepperoni slices, pizza sauce and the 'Mary' spice blend. Cover with foil and cook for 30-40 minutes or until vegetables are tender.
Remove foil and sprinkle the cheese all over! Return to oven and bake until cheese has completely melted.
Remove from oven and allow it to cool for 5 minutes.
