We found some lovely beets at the Truro Farmers Market and thought what better vegetable to use for our Valentine’s Day recipe post! The colours are beautiful, they make a great side kick to anything and we used the Instant Pot – so you can free up your night for other things … 😉 Beets are great on their own just cooked with some lovely aromatics. But here we created a yogurt sauce to compliment them using our ‘Red Rub’ spice blend and topped it with some vibrant herb and crunchy seeds.

Ingredients
-
Instant Pot
-
6 medium beets (1½ lbs)
-
1 sprig rosemary
-
1 orange, 2 peel strips and juiced
-
1½ tbsp Big Cove Foods ‘Red Rub’ spice blend
-
1 cup plain yogurt
-
Handful pumpkin seeds
-
Salt to taste
-
Honey
-
Parsley, chopped
Directions
Start by making your yogurt sauce. In a bowl, mix together the yogurt, 2.5 tbsp orange juice, the Red Rub and salt to taste. Allow those flavours to mingle in the fridge while you prepare your beets.
Scrub down the beets with warm water to remove any dirt.
Place your steam basket in the bottom of the Instant Pot and place your beets, 2 strips of orange peel, the rosemary and 1.5 cups of water in the pot. Cover the Instant Pot, close the valve and pressure cook on high for 30 minutes. Release manually and test if the beets are cooked by poking the biggest one with a fork. You should be able to easily insert the fork, if it needs more time, pressure cook for another 5 minutes and repeat if needed until ready.
Remove the beets from the pot and allow to cool just until you can safely handle them. If you let them cool too long, it gets harder to peel so toughen up those kitchen hand! Using a paper towel, rub the skin off. Cut off any bad looking ends and half the smaller ones and quarter the bigger ones.
On a fancy plate (because it’s our Valentines Day beets and they need to look special!) lay down a good helping of the sauce. You may have extra left over, use for fresh veggie tray or even a creamy stir fry sauce.
Arrange your beets and top with parsley, pumpkin seeds and if desired, a lovely swirl of honey!
Enjoy the rest of your evening!

My cousin and her husband came to visit me in Dominica West Indies. They brought along Egyptian summer and hot jerk spices from.Big Cove Foods!!! The taste sensation just blew my mind. I made a stirfry of chicken with vegetables using the Egyptian summer. The flavor was sensational. I used the hot jerk on some locally caught fresh mahi-mahi. It was absolutely extraordinary. I have a friend who’s coming to visit me in August and I’m hoping that she will be able to bring me a few of the others as well. I am hooked line and sinker. All the best with your business. I highly recommend these spices.. 💕

These little boxes of spice varieties are great! I’m taking them to Ontario this week and will use them as the perfect little ‘hostess gifts’ I use Big Cove spices all the time. ‘Mary had a’ is my favourite. I use it on everything! (I don’t even like lamb so I definitely don’t just use it for that, lol!)

I repurchased this tasty blend when it was available again. I would say it's a medium heat so it's a nice option to have. We also enjoy the Ghost Taco blend but use it sparingly for that extra kick!

Travelled to Cape Breton ( Baddeck, where I was born and raised ) a couple of years ago and found these amazing spices. Been ordering ever since. Shipping to Toronto covered for an order big enough ( which we do ). Pick it up at the One of a Kind Show when we can. Use on meats and roasted veggies.

Sent an assortment to Yellowknife for a birthday gift. Getting happy reports back. I knew I would.

We missed this blend. It’s been a staple in our house for a number of years. Use it in stirfys and on pork.

Purchased at the OOAK show in TO. Love this blend and made the chicken/rice dish on the site. Making it on repeat!

My second time purchasing Ghost Taco and it’s unreal. Perfect amount of spice and no fillers like starch that a lot of other blends have. Great on chicken and beef.
On top of that my package got stuck with the Canada Post Strike and when they learned I was still waiting they sent me a brand new package through a different shipper. Amazing customer service guys, thanks!

What I love about these spices is that they may come individually packaged, but I still turn on a bit more wild, by mixing one package with another. Have you tried Taco Enhancer with Red Rub? Amazing

Egyptian Summer spice blend

Amazing! I put this on everything. It brings everything to the next level.
I love the ability to try so many flavours. Nicely packaged and reseal flawlessly so they keep the freshness.
